We were delighted that our heirloom eggs were featured at the Mohegan Sun Winefest on January 27 & 28. The eggs were served at the exhibitors breakfast both Saturday and Sunday mornings and at the exclusive chefs breakfast at Jasper White’s Summer Shack on Sunday.
The eggs were also used by chefs Mary Ann Esposito, Michael Ginor, Daisy Martinez, Jasper White and Emily Luchetti in their recipes for the wine pairings.
Mary Ann Esposito, host of the public television series, “Ciao Italia,” used our eggs in three dishes at the event — a Caesar salad with a soft poached egg, Eggs in Purgatory, and Nonna Galasso's Beef Braciole with hard-boiled eggs from her new book Ciao Italia Family Classics.

Michael Ginor, owner of Hudson Valley Foie Gras and Lola restaurant, used our eggs in an incredibly rich Foie Gras flan.
Food Network chef and author Daisy Martinez made a wonderful pasta dish using our heirloom eggs to make the pasta.
Boston’s own Jasper White made Blue Eggs and Ham — salmon and scallops wrapped in ham with an egg sauce and fried grits.

Emily Luchetti, San Francisco dessert cookbook author and executive pastry chef, made a delectable Brownie Brown Sugar Parfait.
In addition to working with all these wonderful chefs, we served a delicious custard prepared by Mohegan Sun executive pastry chef Lynn Mansel to visitors to our exhibit. We also served a veggie frittata prepared by our non-profit partner, Community Servings, at an evening event.
